These 3 low calorie summer cocktail recipes are from Sydney nutritionist Shannon Rosie Barge’s new book Conscious Cocktails won’t compromise your bikini body this summer.

Summer drinking season is a lot of fun but can be hard on the waistline. These three recipes won’t compromise your summer diet (and they’re delicious too).

You will need a cocktail shaker, but you can grab one of these from home-ware stores or liquor stores for around $20.

Conscious Cocktails by Shannon Rosie Barge

TEQUILA MOCKINGBIRD

  • 10 mls fresh lemon juice
  • 10 mls fresh lime juice
  • 10 mls fresh grapefruit juice
  • 45 mls tequila (100% agave tequila, tequila reposado or tequila anejo)
  • 15 mls agave syrup
  • ½ cucumber
  • 1 sprig rosemary
  • Pinch Himalayan pink salt

Place fresh lemon, lime and grapefruit juice into a cocktail shaker with the agave, tequila and two slices of fresh cucumber. Muddle to bring out the flavours (this means using a muddler, which is kind of like a mortar and pestle, to break up cocktail ingredients and bring out flavours).

Add lots of ice and shake, shake, shake.

Rim your glass of choice with Himalayan pink salt. Pour mixture into a glass and top with fresh ice and a splash pf soda water if desired.

Garnish with a peel of cucumber and a sprig of rosemary. Arriba arriba!

THE VANILLA PEAR

  • 60 mls whisky
  • ½ cup fresh pear juice
  • 30 mls fresh lemon juice
  • ½ tsp fresh vanilla bean seeds
  • ½ tsp raw honey
  • 1 tsp cinnamon

Place all ingredients except cinnamon in a cocktail shaker and shake until combined.

Prepare glass by running a slice of lemon around the rim, then rim the glass with cinnamon and fill with ice.

Pour liquid over ice and garnish with a slice of fresh pear or vanilla bean.

SPIKED AND SPARKLING

  • 20mls gin
  • 20mls pineapple juice
  • Champagne or sparkling wine
  • 1 tsp ginger

Very finely grate fresh ginger and drop into champagne flute. Add gin and fresh pineapple juice, then top with champagne.

Wait for the ginger to drop and bubbles to settle, then enjoy!
