Who doesn’t love a peanut butter hit for some quick energy?
Not exactly protein balls, these peanut butter balls are quick, easy and taste amazing.
They are the most indulgent before or after workout snack.

INGREDIENTS
- 60 grams (1/4 cup) unsalted butter, room temperature
- 250 grams (1 and 2/3 cup) quality dark chocolate
- 125 grams (1/2 cup) crunchy or smooth peanut butter, plus extra for drizzling
- 190 grams (1 and 1/2 cup) icing sugar

Method:
- Line a large baking tray with baking paper. In a large mixing bowl, add butter and peanut butter. Mix briefly with a mixer until smooth and creamy.
- Add icing sugar and mix with a hidden spoon until a soft dough forms. Scoop small tablespoons of peanut butter mixture and roll into a small, smooth ball using your hands.
- Place on prepared tray. Repeat until all of the dough is gone. Place balls in the fridge for at least 10 minutes so they firm up.
- Melt the chocolate in a shallow bowl in the microwave.
- Dip each peanut butter ball into the chocolate, one at a time, using a bamboo skewer. Gently shake off excess chocolate onto the tray on baking paper so they do not stick.
- Put them in the fridge for at least 20 minutes, then pop in an airtight container to seal.
