Ingredients
- 200g brussel sprouts halved
- 200g sweet potato, cut in cubes 1.5cm
- 2 red onions, quartered
- 1 tbs olive oil
- 2 tsp wholegrain mustard
- salt & pepper, to taste
- 2 cloves garlic, crushed
- 2 x 150g pork loin chops (or loin steak)
Method
- Preheat oven to 180 C.
- In a bowl combine brussel sprouts, sweet potato, onion, 2 tsp of oil, mustard, salt and pepper, and toss until well coated. Season chops with salt and pepper.
- Spread onto a lined baking tray and then nestle chops into vegetables.
- Place tray in the oven for 30 minutes or until chops are cooked through and vegetables are cooked.
- Divide chops and vegetables between two plates to serve.
