Miso soup has long been hailed as a super food. It is one of the best foods you can put into your body, and purportedly one of the reasons the Japanese live such long lives. What many don’t know is how simple and easy it is to make yourself.
Miso Pot Noodle Soup
Serves: 1
Prep: 5 mins Cook: 3 mins
Ingredients
1 sachet miso soup
30g rice noodles
100g firm tofu, cut into 2cm cubes
6 pods frozen edamame, defrosted & shelled
4 button mushrooms, sliced
1 carrot, spiralized or grated
25g spinach leaves
Method
1 Layer miso, noodles, tofu, edamame, mushrooms, carrot and spinach in a jar.
2 Pour over boiling water to the top of the jar, just under the rim, cover and stand for 2-3 minutes. Stir to combine flavours and serve.
Simple and easy!
