What you’ll need:
- 3⁄4 cup desiccated coconut
- 35g Bed Time Beauty – Red Velvet Cocoa (g)
- 1 tbs raw cacao powder (or cocoa powder)
- 1⁄2 cup rolled oats (if gluten-free, use brown rice flakes or quinoa flakes)
- 50g white chocolate, roughly chopped
- 1 cups cashews, soaked in water overnight & drained
- 2 tbs coconut oil, melted
- 2 tbs maple syrup (honey or rice malt syrup)
- 3ml natural red colouring
- 1⁄4 cup desiccated coconut, for rolling
How to make the bites:
- Place coconut, Bedtime beauty, cocoa, oats and white chocolate in a food processor and blend until fine. Add drained cashews, coconut oil, maple syrup and food colouring into a food processor and blend until a smooth paste. Transfer to refrigerator for 30 minutes to firm up.
- Roll mixture into 14 even-sized balls, then roll into extra coconut to coat.
- Serve 1 bite as snack. Store remaining bites in an airtight container in the refrigerator for up to 7 days.
