This Could Be The Most Insta Worthy Breakfast in Bondi Right Now

If you’re sick of boring cereals and peanut butter toast for breakfast, then you need to check out these Insta worthy breakfast toasts.

Mermaid Toast, Unicorn Toast and Galaxy Toast are slowly overtaking many foodie’s Insta posts.

But don’t be deceived by their looks. With ingredients including spirulina, chlorophyll, beetroot juice and even turmeric root, these colourful (and pretty) breakfasts toasts are actually good for you.

Unicorn Toast by @vibrantandpure

Recipe:

  • Create each colour with 2 tablespoons of cream cheese (or vegan cream cheese, made from either almonds or cashews).
  • For hot pink colours, mix in a teaspoon of beet juice until you reach the desired colour.
  • For orange/yellow, mix a few drops of blended or juiced turmeric root and keep adding until you obtain desired colour.
  • For light green, start with approx. 3 drops of chlorophyll and increase until you have a light shade of green.
  • For light blue, use a very tiny amount of spirulina powder and mix into the cheese.
  • For purple, mash a tablespoon worth of frozen blueberries in a ziplock bag. Then add the powder bit by bit to the cheese, until you obtain desired colour.
  • To create the light pink colour, mash a tablespoon of frozen strawberries or raspberries in a ziplock bag and then add bit by bit to the cheese, until you obtain desired colour.

Method:

Apply a thin layer of plain, non-coloured cream cheese to the toast, then use the teaspoon to place a dollop of each colour on the toast.

Using the back of the spoon, smear all the colours across the toast – but not too much where it becomes one colour.

Viola! Unicorn Toast.

Mermaid Toast

Recipe:

Following the same instructions as above, by separating cream cheese (or vegan cream cheese made from almond or cashews) create your sea worthy mermaid colours, by using a variety of blue and green algae powders.

Algae powders are a nutrient-dense superfood with loads of health benefits.

Method:

Once you have created your desired different shades of greens and blues, like the Unicorn Toast – smear a thin layer of plain non-coloured cream cheese on the toast. Then place a dollop of each shade of blue and green on the toast and use the back of the spoon to smear and blend across the toast. Being careful not to blend too much.

Sprinkle with real gold flakes (if you have access to them) or maybe edible gold glitter for extra sparkle.

Galaxy Toast by @sobeautifullyreal

Recipe:

Using vegan cream cheese; made from either coconut, almonds or cashews, mix in some black sesame paste and then separate the cheese into different bowls; depending on how many colours you want to make. Using vegan-friendly and preservative-free blue food dye, create a variety of different shades of blue, from light to dark.

Method:

Spread a thin layer of non-coloured cream cheese on the toast, and then follow with a dollop of each colour you have created, using a small teaspoon. Using the back of the spoon, marble the different shades across the toast by smearing the colours together – being careful not to mix it all too much so it becomes one colour. Top off with pretty little edible glitter stars and strap in for your trip to the moon.
