Ingredients

  • 200g brussel sprouts halved
  • 200g sweet potato, cut in cubes 1.5cm
  • 2 red onions, quartered
  • 1 tbs olive oil
  • 2 tsp wholegrain mustard
  • salt & pepper, to taste
  • 2 cloves garlic, crushed
  • 2 x 150g pork loin chops (or loin steak)

Method

  1. Preheat oven to 180 C.
  2. In a bowl combine brussel sprouts, sweet potato, onion, 2 tsp of oil, mustard, salt and pepper, and toss until well coated. Season chops with salt and pepper.
  3. Spread onto a lined baking tray and then nestle chops into vegetables.
  4. Place tray in the oven for 30 minutes or until chops are cooked through and vegetables are cooked.
  5. Divide chops and vegetables between two plates to serve.
