Look no further than this nourishing poke bowl recipe, which you can easily make at home. Here’s how:
Ingredients: (Makes two)
For the fish
- 1 tbsp sesame oil
- 1 tbps soy sauce
- ¼ cup shallots, chopped
- 1 large fillet of sushi-grade sashimi – you can find this at many fish shops/markets (Note: You must eat the sashimi the day you buy it as it goes off very quickly.)
For the base
- 1 cup cooked brown rice
- 2 cups chopped kale
- 1 tsp garlic salt
- 1 tsp coconut oil
Toppings
- ½ avocado
- ½ diced cucumber
- Pickled ginger (optional)
- 1 tsp sesame seeds
Steps
- Dice sashimi in 2x2cm cubes and place in a small mixing bowl. Add shallots, sesame oil and soy sauce. Mix ingredients and place aside in the fridge.
- Boil rice and set aside.
- Sauté the chopped kale in a pan with coconut oil. Once wilted, add garlic salt. Transfer kale to serving bowl and add rice to create the base.
- Cut up avocado and cucumber, placing on top of the rice/kale base.
- Add sashimi on top and garnish with sesame seeds and pickled ginger.
