Recipe: Five Step Poke Bowl

Looking for a delicious protein packed lunch idea that promotes health from the inside out?

Look no further than this nourishing poke bowl recipe, which you can easily make at home. Here’s how:

Ingredients: (Makes two)

For the fish

  • 1 tbsp sesame oil
  • 1 tbps soy sauce
  • ¼ cup shallots, chopped
  • 1 large fillet of sushi-grade sashimi – you can find this at many fish shops/markets (Note: You must eat the sashimi the day you buy it as it goes off very quickly.)

For the base

  • 1 cup cooked brown rice
  • 2 cups chopped kale
  • 1 tsp garlic salt
  • 1 tsp coconut oil

Toppings

  • ½ avocado
  • ½ diced cucumber
  • Pickled ginger (optional)
  • 1 tsp sesame seeds

Steps

  1. Dice sashimi in 2x2cm cubes and place in a small mixing bowl. Add shallots, sesame oil and soy sauce. Mix ingredients and place aside in the fridge.
  2. Boil rice and set aside.
  3. Sauté the chopped kale in a pan with coconut oil. Once wilted, add garlic salt. Transfer kale to serving bowl and add rice to create the base.
  4. Cut up avocado and cucumber, placing on top of the rice/kale base.
  5. Add sashimi on top and garnish with sesame seeds and pickled ginger.
